Calamari opskrift - Blæksprutteringe
Calamari eller blæksprutteringe er en af de retter man typisk meget hurtigt stifter bekendtskab med, efter man er kommet til Grækenland. De serveres både som en forret, som en hovedret og som en del af en Meze (blandede små retter á la Tapas).
Et tip: Når I ser Calamari i menuen på en restaurant i Grækenland, er de som oftest lavet af frosne blæksprutter, men mange restauranter i Grækenland har også friske blæksprutter – spørg tjeneren hvis de friske ikke står i menuen, og vælg så dem, de har så fin smag i sig, og så er sandsynligheden i øvrigt også større for, at de er fisket lokalt.
Et andet vigtigt tip : Calamari skal steges i olivenolie i meget kort tid. Steges de for længe, bliver de seje!
I Danmark er det sjældent, at fiskehandleren har friske blæksprutter (rør), men nogen gange kan man bestille dem. Får du en frisk blæksprutte, skal du spørge om den er befriet for hinder eller bede fiskehandleren om at gøre det. Dernæst skal du banke den mør, det gør de i Grækenland (og de andre middelhavslande) ved, at banke blæksprutten ind i en klippe adskillige gange. Spørg fiskehandleren. Alternativet er at fryse dem ned i mindst 24 timer, det giver samme virkning.
Ellers er det blot at købe blæksprutterør frosne. Vær opmærksom på, at de frosne oftest har en slags glasur af is omkring sig, og at de skal skylles rigtigt grundigt inden de skæres ud.
Ingredienser:
- 3 blæksprutterør
- 100 ml øl
- 60 g mel
- 4 dl olivenolie
- Salt & peber
Fremgangsmåde
Vi antager, at du har styr på blæksprutten, enten har du blæksprutterør der har været frosne eller måske en hel blæksprutte hvor hinder er fjernet og den er mør (banket eller har været frosset)
Vi starter med dejen, for det her går virkeligt hurtigt. Du skal du hælde øllet i en skål sammen med lidt friskkværnet peber og salt. Sigt melet i lidt ad gangen, mens du pisker, så dejen ikke bliver klumpet. Dejen skal være lidt tykkere end pandekagedej, men ikke meget. Hvis du syntes du mangler lidt mel, så brug lidt mere end der står i opskriften. Læg folie over skålen, og sæt dejen i køleskabet.
Vask blæksprutten indvendigt og udvendigt. Skær derefter rørene i ringe omkring ½ cm tykkelse, og tør dem rigtig grundigt i et rent viskestykke, tag derefter dejen frem igen. Bruger du en hel blæksprutte, skal resten skæres i stykker der ikke er mere end max. 1 cm tykt.
Hæld olien i en lille gryde eller lille pande, gerne så der kan være 4-6 ringe/stykker ad gangen, og sæt varmen på lidt over medium. Bruger man en stor gryde eller pande, skal man bruge meget olivenolie, med en lille pande laver man bare den lille portion her af flere omgange.
Olien skal være godt varm, men må ikke ryge, så vi skal i gang. (hvis du har et digitalt termometer, så er 165-175 grader på olien perfekt, når du begynder at lægge blæksprutteringene / stykkerne ned i panden)
Dyp et stykke i dejen ad gangen (dejen skal hænge fast) og læg den over i panden, når panden er fyldt op, skal du sikkert allerede til at vende den første igen. De skal nemlig have ca. 1 min på hver side afhængigt af varmen på olien. Olien skal lige dække toppen af blæksprutteringene.
Lav evt. een først, for lige at checke, at varme og stegetid passer.
Læg dem på noget fedtsugende papir i et minut og derefter over på en tallerken - Server med citronskiver når de alle er friteret. Du kan f.eks. servere en Tzatziki som tilbehør, her er vores originale Tzatziki opskrift.
